I don't know for sure but I think it may be a dehydration reaction.
Breaking polymers, like proteins, involves the addition of water to cleave the bond (hydrolysis). Endergonic reactions end up with products that have a higher free energy (Gibbs free energy) where the energy is taken from the surroundings. Viceversa, Exergonic reaction have products that have lower free energy, where the energy is released into the surroundings.
Respiration is Exergionic reaction because in respiration energy is released .
