see basically osmosis is the movement of solvent from lower conc of solute to higher conc of solute. so when an animal cell is kept in fresh water the cytoplasm is hypertonic as compared to the water outside the cell. so there is movement of water molecules inside the cell. cell can contain only a limited amount of solvent. so eventually it bursts.
