Can someone please show me how the vector r(t)= <1+t, 2+5t, -1+6t> is parallel to <1,5,6>?

First you must understand that you are moving in the speed dirrecion so the derivative dr/dt=V=<1,5,6>

just take the cross product if it is zero they are parallel.
