I have to write an essay with the topic of: "Describe a setting in which you have collaborated or interacted with people whose experiences and/or beliefs differ from yours. Address your initial feelings, and how those feelings were or were not changed by this experience." How would I write on that topic when I have never really been in that type of situation???

Well, depends on how far you want to stretch it. There are differences in gender and race that can help. You could even take the position that the beliefs of a child and a parent are fundamentally different. People from a different religious or cultural background are the best source of an answer.
