If you are given a velocity graph with several data coordinates, how would you be able to produce an accurate position vs. time graph? I know that the integral of velocity gives you position, but how could you use this if you're not given a function?

You could calculate the area under the curve which is equal to the integral of the function. This will give you delta_x (delta_r in a 3D case) and you can use a reference point to find the exact position.
