organic structures aren't my best, but i'm sure this has been asked lots before. I'd add some kind of functional group that hates water, but I can't help beyond that

The 2 hydroxyl groups are polar. Maybe if you remove them, the molecule will be hydrophobic. But I'm not sure since organis isn't my best subject :P

take off the alcohol and amine group(s) so that it can no longer hydrogen bond.
