I think of a table as something with ordered pairs, triplets, stuff like that where x points to y... matrices are used to list relations but not in that since. we list equations or expressions and use them to make the math easy on paper.

in short, a table is a generic term for an arrangement of rows and columns a matrix is a table, a matrix is a bit more specific though, less general
