I like it.

Starts out as free enzyme and substrate floating around in solution. E + S
Then they associate and are basically one molecule, so there is your E-S
Then the enzyme turns the substrate into a product, but they are still bound. E-P
Then they separate and are separate molecules again. So E and P.
