What is the molecular reason for egg white to become solid when heated?

OpenStudy (anonymous):

Egg whites are made of lots of different proteins. When we cook eggs, the heat causes the proteins to break apart. This is called "denaturation." After the protein bonds break apart, new and different bonds are formed between the proteins. In other words, the heat causes the protein bonds, in the egg whites, to change. That's why the egg whites become solid.

Thanks and yeah I understand that, but I was interested in the more detailed version of the answer, including the bond names and every little detail possible.....grateful tho :)

Oh christ. Well, you could try the chemistry section if you like.

will do thanks again :)
