Depending on the experiment you perform, one (or both) of those behaviours will be observed. So i don't think any of them are more "fundamental" than the other. Also, I saw this documentary/book preview on Sean Carroll where he mentions that everything is made of fields. I suggest you read the book, or look up the preview.

no i can't :S i'm not familiar at all with it. I'm still on the first steps of QM (particle in xbox type of questions) so understanding particle physics is not in my near future.
