I've never heard of a story about a Red Blood cell. I suppose you might want to write it from the red blood cells perspective and tell the reader about what it does, what it's composed of. Etc. Hope its helpful.

Maybe tell the story of how it travels from the heart and lungs around the body Carrying oxygen around.

You can also talk about the transportation of oxygen and haemoglobin? Maybe describe where the red blood cell lives, blood? Interactions between white blood cells and platelets?
