can age and gender serve as a control in science

I don't believe so. a control is something that is just left alone. say, if you were to measure the temperature change of coffee if you add creamer in now, or later, which would be the hottest, you have one cup of coffee that you add the creamer to now, one that you add it to later, and one that is the control: you do nothing to it. So i don't believe gender or age can be a control.
