the temp remains constant for a moment, idk why it happens but it does, then the temp starts raising again.

The temperature remains constant because the molecules of the substance are undergoing a phase change e.g. heating water to its boiling point

as you add energy to the water molecules, they are in the process of converting from a liquid state to a gaseous state

and the temperature stays constant until all the water molecules are converted into water vapor. Hope this helps :)
