I have to create a book for 4th graders in my AP world history class about the Byzantine Empire. And the topics I have to cover are the religion, differences and split between Rome and Constantinople, treatment of foreigner and others, and opportunities for social interaction.

What I'm asking here is how do I make these topics "Kid-Friendly" so they would be able to understand?

Take the topics and strip them down to their basics. Embellish them so that they support being nice to people, and emphasize the good things about the Byzantine Empire and what they supported in their time.
