To help you out, basically what happens is the potato and yam is made up of carbohydrates, which is basically just sugar. Sugar has a very similar structure to alcohol (wonderful, right?!) so little micro-organisms come in and start eating and breaking down the more complex hydrocarbons into smaller ones, and ethanol is one of those molecules leftover from the bacteria eating them. So yeah, alcohol is really just sugar after yeast eats it and craps it out.
