Often this is done by using rotation, either in a centrifuge, or for pilot training in a device with a long arm that rotates with the pilot in a chair at the end of it, or by rapidly accelerating something or by letting something fall so that within it, there appears to be no gravity...you reverse direction before hitting the ground.
