What one factor identifies an atom as a specific element?

The number of protons is what makes an element an element. If you have a plain old proton flying around, it's called hydrogen; similarly, if a proton gets knocked off of an atom, it no longer counts as the element it used to be. This isn't the case with electrons or protons; that's another story.
