I'm not sure what the examples from your lesson supplement are, but the Byzantine Empire used to be the Eastern Roman Empire. They thrived while the Western Roman Empire collapsed. The official language of the Byzantine empire was Greek (before that, it was Latin) and a lot of the things they did -- such as how to run a huge empire, create the laws needed to govern it, organize armies, build vast cities and monuments, etc.. -- were inherited from what used to be the Roman Empire.
