What kind of reaction occurs when you pour hydrogen peroxide on top of sliced potatoes?

When the hydrogen peroxide mixes with the potato, bubbling occurs, which is part of the metabolic process of decomposition. When the hydrogen peroxide comes into contact with the catalase (an enzyme in the potato cells), that causes the reaction.
