what is the difference between chitin and cellulose?

Its very simple Cellulose is the linear chain of glucose (D-glucose) units. Chitin is also made up of glucose, but it consists amino acids and acetyl functional group (N-aceytlglucosamine) Evolutionary Relationship. Both the molecules are biopolymers. Cellulose is largely found in plants. It considered to be the oldest component of cell wall structure in plants, algae and in some bacteria. But, chitin molecules, however the latest development of cell wall structure to add more hardness and rigidity in the exoskeleton of animals. Ex- mollusks, crab, lobsters, wood lice etc. The next level of development could be keratin based (mixture of cellulose and aminoacid) as in humans hair and gemboks horns.
