I wrote a paper to Google/Mozilla/WC3 about MIME types in the 6th grade.

There is no rational or logical use for MIME types, except allowing site to fingerprint you. (Sure they help display content in a format that is closes to your system capabilities, but it's benefit over privacy.)

Thought the short story is that the combination of information you give:
Fonts, MIME types, screen resolution are all ways to track that user.
Put them together, and you have an ultimate pattern to track this user across entirely different webpages.

Okay, giving fonts is pretty bizarre. They provide that in HTTP headers? MIME types and screen resolution do have enough practical purposes to justify them. The user doesn't really need to send MIME types though, usually the server does that.
