The conversion of proteins into amino acids is known as hydrolysis since it requires water and hence is the opposite of dehydration synthesis. http://en.wikipedia.org/wiki/Peptide_bond DNA synthesis is a dehydration reaction since water is a by product; as is formation of lipids from fatty acids
