The Sun is almost entirely plasma, yes. It is a state of matter (electrically charged gas). It produces light (as does everything else), but is not light itself.

Knowing the wavelength of the star can tell us if its moving away or towards us, and at what speed. You may want to reward these a little also a simple Google search helps a lot and you can get simpler term answers
