The Sun is almost entirely plasma, yes. It is a state of matter (electrically charged gas). It produces light (as does everything else), but is not light itself.

Taking the spectra of stars can tell us the color, speed, composition and more things about the star. Absorption lines in the spectrum can tell us about the kind of light the star is emitting, and it atmosphere. Knowing the wavelength of the star can tell us if its moving away or towards us, and at what speed.
