Once out of the stomach the Ph of the contents is raised by the Bile to a copable Ph level for the intestinal region. As Pepsin Denatures at pH5 (or more like pH6.8) pepsin works in acidic medium ( its optimum pH being 2) it is denatured at pH above 4 and the pH of intestinal juice is alkaline so it stops working as the chyme enters duodenum as acid( HCl) is nuetraliz or your second choice
