Yes amylases break down starch. As you might know, starch among others contain the long polymer called amylose (from which the enzyme name is found), which is a long chain of α-D-glucoses linked between the carbons 1 and 4. So to break down amylose, amylase catalyze the hydrolysis of 1,4-α-D-glycosidic bonds.
