If you look at a map of China which shows mountainous regions, rivers, etc., you'll see that the great China Plain is fairly closed off. This was the area which was contested throughout China's history.

Farming was difficult outside of this area, e.g. in the mountain regions, in the frigid north east, etc. However, as new crops were introduced, the populace find ways to use these areas.
