Why are models used to study the formation of the universe?

because we can't use the real thing, can we?

As an extension of what Aaron said, we were not there to say what happened and how the universe was created. Plus, if we directly observed it, we'd be seeing it in a specific point in time. I do believe that models cover everything, from conception to destruction, which takes billions of years.
