why is the second diagram parallel? I don't understand how it can be since there is no real nodes.

Because N and the earth are nodes (some current will flow out of N to the rest of the circuit).

I understand that where the earth is connected it is a node, but how is n a node when it is only connecting two things? (in a series circuit it connects two things all the time and doesn't make it parallel)

When you look for the equivalent resistance, you imagine that the circuit is connected to some other electric stuff.
