and i'm guessing the underlined clause starts at even though right?

well lets look at it. Aunt Josey served hot soup "even though it was the middle of summer" it seems like an adverb because she ( Aunt Josey) is doing something, I believe they are hinting towards what she did during the middle of summer. does that make sense?
