Usually not in the address. Usually, it's someone@domain and a DNS check of domain returns an MX (mail exchange) record (address) and the email is sent to the machine at that address which hopefully is the mail server for that domain.

Don't over think it. The domain you're sending mail to is the host. In its simplest form you can send and receive email to other users on the same computer
