When a cellular membrane is departured or broken the hydrophobic areas,that is hydrophobic fatty acid region tend to aggregate together. This is due to the fact that the Phospholipid arrangement is spontaneous and is thermodynamically most stable. A small tear in the bilayer creates a free edge and thus exposes a part of the hydrophobic tails to the polar environment and this is thermodynamically unfavourable, which is overcome by by closing on itself and forming a sealed compartment

See as much i know carbohydrates alone can not prevent dehydration.
It is adviced to take carbohydrates along with fluids and electrolytes. Carbos enhance the intestinal absorption of water.
