One is the production of enzymes the break down lipids, nucleic acids, carbohydrates, and proteins. What is the other? It produces bile, a fluid containing lipids and salts, which dissolves and disperses fat droplets. it contains villi and microvilli, folds and projections that drastically increase the surface area through which nutrients are absorbed. it produces sodium bicarbonate, a base that reduces the acidity so the digestive enzymes can function properly. it removes excess water from the undigested material left at the end of the digestive process.
