I'm sure that "soy" is the verb.

I'm NOT sure if both "yo" and "estudiante" are the subject. I'm thinking just "estudiante" maybe.

Yo soy estudiante-->I am a student. The verb is definitely "soy", like @Blank stated. However, the subject is not "estudiante", it is "yo" because "I" would be the subject if the sentence were in English. "Estudiante" is part of the predicate.
