Read the following draft for a research paper on Italian food. When you think of Italian food, does your mouth always water for pizza or pasta? Actually, Italian food includes a tremendous variety of dishes. These tasty morsels come from many different regions. For example, one part of northern Italy around Milan gave the world risotto, a rice dish, and polenta, which is cornmeal (Sanders 42). Bologna, also in northern Italy, is credited with introducing tortellini and prosciutto di Parma, a dry cured ham Valli 412 Eggplant Parmesan, another Italian favorite, hails from southern Italy.
