Sucrose is a disaccharide of fructose and glucose. Starch and cellulose are polysaccharides of glucose monomers. Polysaccharides are formed by condensation reactions and broken down by hydrolysis. Hydrolysis is the process by which a water molecule is used to break up a larger molecule. In this case, the only answer that would apply would be the conversion of cellulose into glucose - large broken down into small.
