There are a lot of spanish speaking countries (Panama, Mexico, Colombia, Peru, Argentina) in fact most  south and central american countries speak spanish. 
If you choose a country ( Colombia, venezuela,Ecuador  and more) that dont have seasons it would be easyer because it depens more on the city that in the time of the year.

For example if you want to visit San Andres or Cartagena (Colombia) during May (or any other month) the weather will probably be hot and in San Andres there will be a fresh breeze. You will need a hat, a bikini, a summer dress, sandals or anything that you would take to the beach.
