The answer would be the number of lines. Sonnets always have 14 lines total, and the rhyming patterns may vary. Just a bit of additional info: the volta is the dramatic "turn" in the piece. Typically in Italian sonnets, the turn will appear towards the middle of the sonnet, and in Shakespearean (English) sonnets, usually at the end. A heroic couplet is a feature unique to Shakespearean sonnets.
