It seems to me there are three major axes: what people say is true, right, lawful, virtuous, and so forth, that is, what are their ideals; what they think they do, that is, what they say they and others do in observance (or not) of their ideals; and what they actually do.

When you have those three levels firmly in mind, you can then inquire about specific differences, such as attitudes toward property, the status of women, basis of kinship, and so forth.
