Porosity describes how porous a compound is. A compound is porous if it has lots of little holes through which air or a fluid like water can pass. Here you're adding water to equal amounts of the three substances. If the substance is really porous, it will easily absorb the water (e.g. sponges are super porous). If it isn't very porous, it will not absorb water as well and so the water will just sit on top because it has no where else to go. So...based on the information we're given in the question, Substance C is most porous because it absorbed all the water, Substance B is least porous because it had the largest volume of water remaining on top, and Substance A is somewhere in between. Substance C has the greatest porosity. Hope that made sense!
