In order to have convection, the parts of the system need to be able to move (at least somewhat) independently of the other parts of the system. That is, the material needs to be able to flow. It needs to be a fluid. When we say fluid, most people think of liquids, like water. And it's true, water is a fluid. Gases are as well, however.
