I figured out that He would use a survey and for the sampling method he would get random people of various age groups who have kidney disease I just can't seem to figure out what the parameter of interest is and I also don't know how to estimate the parameter

You would want to sample people that take anti-inflammatory drugs.
People that have kidney disease would be the parameter of interest.

I haven't taken stats in forever, but this would be what I did
