the water is absorbed from the roots of the plants upwards against the earth called negatively geotrophic.. so the water moves within the capillaries present in the xylem and it may be symplastic movement or apoplastic movement... this phenomenon is also called as "ascent of sap" Hope this helped you my friend.. @Ethan2255
