Well job shadowing is normally just a one day thing, or a few days. You follow around an employee and see what they do, how they act, and what their duties are, etc. An internship throws you into that environment basically on your own (you don't have to follow anyone around). You have your own part to play in the work force, whereas while job shadowing you are there simply to observe.
