Great question! Although the word "uncle" is a noun, it does not necessarily function as a proper noun. However, it is treated as a proper noun if it is used as a part of his name. In other words, if you were to simply say "my uncle" it would remain lowercase. The dish "potato salad" is not a brand name, so it does not require capitalization.
