The human body can reuse some of the enzymes found in raw fruits and vegetables. Why is this not the case for cooked fruits and vegetables?

those enzymes have been denatured or degraded due to the heat from cooking (and other chemicals) disrupting their formation. In other words, they're broken, but you can harvest the parts to make new enzymes.
