What about a simple subject? That is what the sentence is focusing on or talking about, correct? So the simple subject in this sentence : The young boy was scolded by his mother for playing in the street The simple subject would be boy

Yup. If it was complete subject, it would be 'young boy' but young is a modifier. So it is boy.
