Why is the peppered moth story evidence of evolution?

i remember this
basically there were white and black moths
and there was soo much polution only the black moths survived because they were invisibile to birds but then the polution disipated and the white moths survived because predators couldnt see them much

this is evolution because its survival of the best adapted to changing environs
