I think i got it. Matter means 'occupies space', so the answer to the first part of your question "Which matter matters" would pretty much be all matter in the world. Because Matter is pretty much everything around us and pretty much everything we have around us matters to us.

That second part " what matters with matter?" pretty much everything matters with matter. Because if we didn't have matter we wouldn't have alot of things. We probably wouldn't be able to survive without matter.
