Do stem changing verb rules only apply to certain verbs? Do you have to memorise each stem changing verb? Or are there separate ones for ar,er,ir?

Stem changing applies to all verbs. If you know them, you wont need to memorize them. Its really easy, to be honest. Ex. "Yo 'quiero' ir al parque."(I wont to go to the park.) changes to "Nosotros 'queremos' ir al parque."(We want to go to the park) Depending on plural or singular, all verbs change.
