why tomatoes that are not quite ripe (and too hard) should not be stored in the fridge?

not sure what chemical reaction is attributed to ripening, but, in general, anytime you lower the temperature, you slow down the rate of a chemical reaction. So if you put a non-ripe fruit (tomato) in the fridge it will take longer to ripen.
